Nutritional Benefits: Very good source of fiber, Vitamin C, Vitamin E and Protein.
- 1/2 apple
- 4 asparagus spears
- Vegetable stock
- 1/2 washed and peeled carrot
- Peel and core apple and add to small saucepan with asparagus and carrot.
- Cover apple and veggies with vegetable stock and bring to a boil and simmer for 5-6 minutes.
- Scoop the apple, carrot and asparagus into a food processor or blender and puree until smooth, adding as much of the stock needed until the desired consistency is reached.
